Sandwich Bread Alternative (gluten free, nut free)

Teff Crepes

I have made a lot of gluten free bread over the years, but I never really want to repeat a recipe. They all taste fine. It is either too much work or the bread is loaded with nuts or nut butter.

Now when I want to eat my salad in a wrap I make teff crepes. The batter is very thin, but don’t worry they hold together. This recipe makes 6 large crepes. If you want to learn more about teff read my previous post.

Ingredients
  • 1 t coconut oil
  • ⅓ c plus 1 T teff flour
  • ⅓ c light coconut milk
  • 2 eggs
  • 3 T water
  • ½ t baking soda
Instructions
  1. Heat coconut oil in pan.
  2. Add remaining ingredients to blender and blend.
  3. Pour ⅙ of batter into hot pan and flip when bubbles form.
