Teff Breakfast Cereal

Teff is a super grain and the smallest one around. It is smaller than a poppy seed. Super grains are full of nutrients and contain protein. Teff is a good source of calcium, fiber, and absorbable iron.

From my experience, teff was more satisfying than oatmeal and did NOT need sugar. It does have more calories, but it contains resistant starch. Resistant starch is a prebiotic that feeds the good bacteria in the gut.

In my upcoming Spring Cleanse I include super grains. I always list some as an option, but this is the first time the suggested meal plan has some recipes that contain super grains. Remember a cleanse is not about deprivation.

Teff Breakfast Cereal

Ingredients
  • ½ c whole grain teff
  • ¾ c water
  • 1 T oat bran
  • 1 T coconut flakes
  • ½ c blueberries
  • ¼ c dairy free milk of choice
  • optional toppings: ground flax, pumpkin seeds, potato starch, dried cranberries
Instructions
  1. Combine teff and water in a saucepan over high heat.
  2. Bring to a boil and lower to a simmer for 5 minutes.
  3. Add oat bran, coconut, and blueberries.
  4. Simmer for 5-10 more minutes adding dairy free milk slowly until desired consistency is achieved.
  5. Take off heat and let cool.
  6. Add toppings.
