Coconut and Cashew Buckwheat Cereal (Gluten-Free)

There is only one word for how I feel after eating this breakfast and that is NOURISHED.  It is my alternative to oatmeal when I crave a warm breakfast.

Coconut and Cashew Buckwheat Cereal (Gluten-Free)

Ingredients
  • ½ cup buckwheat groats
  • ½ teaspoon apple cider vinegar
  • ¼ cup cashews
  • water for soaking cashews, buckwheat and goji berries
  • 1½ cups water
  • ½ teaspoon vanilla powder (I like Moonjuice)
  • 3 drops stevia or 1 teaspoon maple syrup or honey
  • toppings: goji berries, ground flax seeds, shredded coconut and banana
Instructions
  1. Soak buckwheat groats in water with apple cider vinegar for one hour or overnight.
  2. Soak cashews for 2 hours or overnight.
  3. Drain and rinse buckwheat.
  4. Place buckwheat and one cup water in a small saucepan and cook for 10-20 minutes. Stirring frequently.
  5. Rinse cashews and put in blender with ½ cup water and blend to make cashew cream.
  6. Add cooked buckwheat to a blender along with vanilla and stevia and blend with cashew cream.
  7. Divide into two bowls and top with drained goji berries, ground flax, shredded coconut and banana.
