Cauliflower Pizza Crust with Arugula

Ingredients
  • 1 head of cauliflower
  • 1 flax egg (1 tablespoon ground flaxseeds mixed with 3 tablespoons water)
  • 1 egg
  • 1 tablespoon coconut flour
  • 1 teaspoon Italian seasoning
  • ½ teaspoon sea salt
  • 1 jar pizza sauce
  • arugula
  • 1 tablespoon olive oil
Instructions
  1. Preheat oven to 400.
  2. Line a baking sheet with parchment paper.
  3. Chop cauliflower and steam for 3-5 minutes.
  4. Place steamed cauliflower in a food processor and pulse until fine.
  5. Add egg, flax, coconut flour, Italian seasoning and salt to food processor and pulse until all combined.
  6. Scoop out mixture onto lined baking sheet and shape as you like.
  7. Bake for 30 minutes.
  8. Add sauce and return to oven for 5 minutes. You can add other toppings now too like vegetables or cheese.
  9. Add arugula and olive oil to pizza crust and serve.
