Cauliflower Pizza Crust with Arugula

Ingredients
- 1 head of cauliflower
- 1 flax egg (1 tablespoon ground flaxseeds mixed with 3 tablespoons water)
- 1 egg
- 1 tablespoon coconut flour
- 1 teaspoon Italian seasoning
- ½ teaspoon sea salt
- 1 jar pizza sauce
- arugula
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400.
- Line a baking sheet with parchment paper.
- Chop cauliflower and steam for 3-5 minutes.
- Place steamed cauliflower in a food processor and pulse until fine.
- Add egg, flax, coconut flour, Italian seasoning and salt to food processor and pulse until all combined.
- Scoop out mixture onto lined baking sheet and shape as you like.
- Bake for 30 minutes.
- Add sauce and return to oven for 5 minutes. You can add other toppings now too like vegetables or cheese.
- Add arugula and olive oil to pizza crust and serve.
