Coconut and Cashew Buckwheat Cereal (Gluten-Free)

There is only one word for how I feel after eating this breakfast and that is NOURISHED. It is my alternative to oatmeal when I crave a warm breakfast.
Coconut and Cashew Buckwheat Cereal (Gluten-Free)

Ingredients
- ½ cup buckwheat groats
- ½ teaspoon apple cider vinegar
- ¼ cup cashews
- water for soaking cashews, buckwheat and goji berries
- 1½ cups water
- ½ teaspoon vanilla powder (I like Moonjuice)
- 3 drops stevia or 1 teaspoon maple syrup or honey
- toppings: goji berries, ground flax seeds, shredded coconut and banana
Instructions
- Soak buckwheat groats in water with apple cider vinegar for one hour or overnight.
- Soak cashews for 2 hours or overnight.
- Drain and rinse buckwheat.
- Place buckwheat and one cup water in a small saucepan and cook for 10-20 minutes. Stirring frequently.
- Rinse cashews and put in blender with ½ cup water and blend to make cashew cream.
- Add cooked buckwheat to a blender along with vanilla and stevia and blend with cashew cream.
- Divide into two bowls and top with drained goji berries, ground flax, shredded coconut and banana.
