Super Healing Soup

Even though it is spring here the weather just does not want to warm up. This warm soup is just the answer to the cold nights. It is filled with ingredients that will detoxify and soothe the body.

Key Ingredients:

Bone Broth
This ingredient contains absorbable minerals like calcium and magnesium. It is beneficial to the stomach and may help improve the appearance of the skin.

Fennel
This herb contains vitamins A and C. Fennel may reduce bloating and improve digestion.

Cilantro

Ingredients
  • 1 tablespoon avocado oil or ghee
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 1 fennel bulb, trimmed and chopped
  • 3 cloves garlic
  • 16 oz. bone broth (I use Brodo)
  • 1 4-ounce can diced green chilies
  • 3 boneless chicken breasts (or use mung beans as a meat free option)
  • 1-teaspoon turmeric
  • 1-teaspoon cumin
  • 2 cups broccoli
  • 1 avocado
  • cilantro
  • salt and pepper
Instructions
  1. Heat the avocado oil in a Dutch oven.
  2. Add the onion and carrots and sauté for 5 minutes.
  3. Add the garlic and fennel and sauté for another 2-3 minutes.
  4. Add the broth, green chilies, and spices.
  5. Add the chicken breasts.
  6. Simmer for 30 minutes then remove the chicken.
  7. Shred the chicken and set aside.
  8. Add the broccoli and cook for 2-3 minutes.
  9. Add the shredded chicken back to the soup.
  10. Serve with sliced avocado, cilantro, salt and pepper.
