Tigernut Chocolate Almond Cookies

Tigernuts are a vegetable and not a nut. According to Organic Gemini, the maker of TigerNut Flour, tigernuts are the number 1 source of resistant starch. What is resistant starch? Resistant starch does not get digested in the stomach or small intestines. When it reaches the colon it feeds the good bacteria. My favorite source of resistant starch, before I found tigernut flour, was green bananas. I found the flour at Whole Foods and bought it because I liked the nutritional profile. I was pleasantly surprised by the taste and look forward to using it in place of other flours. My kids enjoyed this recipe and next time I will try a nut free version for when they have friends over.
Ingredients
- ½ cup tigernut flour
- ½ cup almond butter or ½ cup almond meal
- ⅓ cup chocolate chips
- 2 tablespoons maple syrup
- 4 tablespoons coconut oil
- 1 tablespoon ground flax seed
- 1-3 tablespoon water
- ½ teaspoon baking soda
Instructions
- Combine all ingredients in bowl and place scoop of dough on parchment lined baking sheet. Bake at 320.
