9 Smoothies That will Change Your Life

Don’t just walk past the rhubarb next time you are in the market.  I have noticed it available since receiving it in my CSA box of organic produce.  Rhubarb is a vegetable that looks like red celery but it is treated like a fruit.  Unlike celery you cannot eat the leafy portion instead, you can only eat the stalks.

Rhubarb is a good source of vitamin A, vitamin C, vitamin K, fiber, and calcium.  It has low-calorie content and so many benefits.  I can’t believe I have been missing out for so long.  I started with making a delicious Rhubarb Pie Smoothie and next up I will be making rhubarb sauce to top on roasted chicken.

Strawberry Rhubarb Pie Smoothie

Ingredients
  • 16-24 ounces water
  • 2 tablespoons cashew butter
  • 2 tablespoons oat bran or gluten free oats
  • 1 stalk rhubarb cut into pieces
  • 1 cup frozen strawberries
  • 1 bunch mild greens like spinach or romaine (optional as this does change the taste)
  • 1 scoop vanilla protein powder
  • 1 teaspoon Camu powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 dropper stevia or 1 teaspoon honey
  • 3 ice cubes
Instructions
  1. Mix water and cashew butter in blender
  2. Add the remaining ingredients and blend until smooth
