My New Favorite Salad Dressing

Get Ready for Summer Cleanse Approved

I like to keep my summer cooking easy and I am sure I will be making this salad dressing a lot. You have to resist the urge to drink it.

Superfood Focus: Sacha Inchi

Sacha Inchi is a seed that comes from a fruit native to Peru. While the fruit is not edible the seeds are. Sacha inchi is a good source of Omega 3, vitamin E and vitamin C. Sacha inchi may be helpful for those with high cholesterol and also for weight loss. (Source)

You can use the oil in place of olive oil for salad dressings. You can even use it as part of you skin care routine. Here is a link to one of my favorite skin care lines using it in their products.

Cinnamon is anti microbial and may help lower blood sugar. (Source)

Here is a single serve recipe, but you can make a batch and store it in a mason jar in the refrigerator:

Smooth Honey Dressing

Ingredients
  • 1 teaspoon honey
  • 2 teaspoons apple cider vinegar
  • 1 tablespoon Sacha Inchi oil (You could use olive oil instead)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon Dijon mustard
  • ⅛ teaspoon salt
Instructions
  1. Gently warm honey and add remaining ingredients to the melted honey
  2. Whisk all to combine and serve
