Mother’s Day Lava Cake

Today is the final day of the Spring Cleanse and it also Mother’s Day.  I wanted to make a sweet treat with healthy ingredients.  I chose lava cake because it was a favorite that I used to share with my  mom.  These cakes are mini but satisfying.  You only need one!

Ingredients
  • 5 oz 70% dark chocolate (I sometimes use 100% chocolate mixed with stevia)
  • 3 tablespoons coconut oil (plus extra for pan)
  • 3 eggs
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 tablespoon almond flour
  • optional toppings: raspberries, melted chocolate, coconut whipped cream, non-dairy ice cream
Instructions
  1. Preheat oven to 320º.
  2. Grease pan with coconut oil.
  3. Use a 6-cup mini muffin silicon baking pan or ramekins depending on how big you want your cakes.
  4. Melt coconut oil and chocolate and set aside.
  5. Add eggs in a blender with salt and vanilla extract.
  6. Blend egg mixture on low for about 2 minutes.
  7. Add cooled chocolate mixture plus almond flour to egg mixture and blend again to combine.
  8. Pour mixture into the muffin pan and bake for 10 minutes.
