Mother’s Day Lava Cake

Today is the final day of the Spring Cleanse and it also Mother’s Day. I wanted to make a sweet treat with healthy ingredients. I chose lava cake because it was a favorite that I used to share with my mom. These cakes are mini but satisfying. You only need one!

Ingredients
- 5 oz 70% dark chocolate (I sometimes use 100% chocolate mixed with stevia)
- 3 tablespoons coconut oil (plus extra for pan)
- 3 eggs
- 1 teaspoon vanilla extract
- pinch of salt
- 1 tablespoon almond flour
- optional toppings: raspberries, melted chocolate, coconut whipped cream, non-dairy ice cream
Instructions
- Preheat oven to 320º.
- Grease pan with coconut oil.
- Use a 6-cup mini muffin silicon baking pan or ramekins depending on how big you want your cakes.
- Melt coconut oil and chocolate and set aside.
- Add eggs in a blender with salt and vanilla extract.
- Blend egg mixture on low for about 2 minutes.
- Add cooled chocolate mixture plus almond flour to egg mixture and blend again to combine.
- Pour mixture into the muffin pan and bake for 10 minutes.
