Homemade Tortillas & Lentil “Meat”

A few summers ago I was on a real lentil taco kick. I made the Lentil Taco recipe from Skinny Bitch Ultimate Everyday Cookbook at least once a week. This recipe is adapted from that and I also make my own tortillas instead of using store bought.

Homemade Tortillas

Ingredients
  • 3 eggs
  • 2 tablespoons coconut oil
  • 4 tablespoons almond milk
  • 3 tablespoon coconut flour
  • 2 tablespoons arrowroot
Instructions
  1. Heat 1 tablespoon coconut oil in large frying pan.
  2. Add eggs and 1 tablespoon melted coconut oil to mixing bowl and stir.
  3. Add coconut flour, arrowroot and water to egg mixture and blend well.
  4. Place a scoop of mixture on heated pan and flatten out so it is thin and about 6 inches wide.
  5. Cook on one side and flip.

Lentil “Meat”

Ingredients:

  • 3/4 cup green lentils rinsed
  • 3 ½ cups water
  • 1 small onion chopped
  • 1.5 tablespoons mexican seasoning
  • 4 tablespoons marinara sauce
  • Toppings: avocado, romaine and cilantro

 

Directions:

  1. Add lentils, water, onion and seasoning to pot.
  2. Bring to boil then reduce heat and simmer until lentils are soft, about 30 minutes.
  3. Add marinara sauce and blend either using an immersion blender or a regular blender.
  4. Season with salt to taste.
  5. Fill tortilla with lentil “meat” and add toppings.
