Gluten Free Blender Waffles

Today was the first day of school for 2016. We started off the morning with this easy breakfast that both my kids loved.

Gluten Free Blender Waffles

Serves: 4 Waffles
 
Ingredients
  • ¾ c quinoa flour
  • ¾ c almond milk
  • 3 eggs
  • 1 banana
  • 1 scoop plain protein powder
  • 1 teaspoon ceylon cinnamon
  • 1 teaspoon MCT oil or melted butter
  • ½ teaspoon baking powder
  • ½ c dark chocolate chips
Instructions
  1. Preheat waffle maker. I set mine at level 3. Combine all ingredients except chocolate chips in the blender. Pour some batter on waffle maker and then add chocolate chips. I like to add more batter on top of the chips so they do not burn. You could omit chocolate chips as these taste great without. I do not spray anything on the waffle maker and these do not stick.
