Ginger Tea for Two

I recently had ginger tea at the Granola Bar in Westport and had to make it as soon as I got home. Fresh ginger is great to keep in your refrigerator, as it has so many benefits, and it lasts for weeks unpeeled.
Some benefits:

- Relieves stress

- Improves digestion
- Fights nausea

Ginger Tea

Serves: 2
Ingredients
- 3 cups water
- 1-inch fresh ginger cut into slices
- Juice of one lemon
- Stevia or honey to sweeten
Instructions
- Bring water to a boil
- Add cut ginger and let simmer for 15-20 minutes
- Strain ginger or keep it for serving
- Take off heat and add lemon juice and sweetener
- Serve warm with sliced lemon in cups
