Super Healing Soup

Serves: 4-6
- 1 tablespoon avocado oil or ghee
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 1 fennel bulb, trimmed and chopped
- 3 cloves garlic
- 16 oz. bone broth (I use Brodo)
- 1 4-ounce can diced green chilies
- 3 boneless chicken breasts (or use mung beans as a meat free option)
- 1-teaspoon turmeric
- 1-teaspoon cumin
- 2 cups broccoli
- 1 avocado
- cilantro
- salt and pepper
- Heat the avocado oil in a Dutch oven.
- Add the onion and carrots and sauté for 5 minutes.
- Add the garlic and fennel and sauté for another 2-3 minutes.
- Add the broth, green chilies, and spices.
- Add the chicken breasts.
- Simmer for 30 minutes then remove the chicken.
- Shred the chicken and set aside.
- Add the broccoli and cook for 2-3 minutes.
- Add the shredded chicken back to the soup.
- Serve with sliced avocado, cilantro, salt and pepper.
