Teff Breakfast Cereal

- ½ c whole grain teff
- ¾ c water
- 1 T oat bran
- 1 T coconut flakes
- ½ c blueberries
- ¼ c dairy free milk of choice
- optional toppings: ground flax, pumpkin seeds, potato starch, dried cranberries
- Combine teff and water in a saucepan over high heat.
- Bring to a boil and lower to a simmer for 5 minutes.
- Add oat bran, coconut, and blueberries.
- Simmer for 5-10 more minutes adding dairy free milk slowly until desired consistency is achieved.
- Take off heat and let cool.
- Add toppings.
