Curried Sunflower-PÂTÉ Lettuce Wraps

This was one of my favorite meals from the Spring Cleanse last year. It is not on the plan this year, but you could always substitute it in!
Curried Sunflower-PÂTÉ Lettuce Wraps

Ingredients
- 2 cups raw sunflower seeds, soaked overnight and drained
- 2 teaspoons curry powder
- 1 garlic clove
- ½-inch piece of ginger
- ⅔ cup water
- Juice from 1 lemon
- 1 teaspoon sea salt
- 1 teaspoon pepper
- ½ cup shredded carrot
- 1 large celery rib, minced
- ¼ cup raisins
Instructions
- Add sunflower seeds, curry powder, garlic, ginger, water, lemon juice, sea salt, and pepper to a high-speed blender.
- Blend until smooth.
- Remove from the blender and add to a mixing bowl.
- Add shredded carrot, chopped celery, and raisins.
- Mix well and let it set in the refrigerator for at least 30 minutes before serving.
- Serve on a bed of lettuce.
