Asparagus Pancakes

Asparagus is one healthy food that I really do not like to eat except if it is prepared in a pancake. My mom used to make this recipe as an appetizer for holiday parties. I changed the recipe to be dairy free and gluten free.
Ingredients
  • I bunch asparagus
  • 3 eggs
  • ¼ cup almond milk
  • ¼ cup buckwheat flour
  • 1 bunch fresh basil
  • 1 tablespoon coconut oil
  • 1 teaspoon baking soda
  • 1 teaspoon apple cider vinegar
  • salt and pepper to taste
Instructions
  1. Steam asparagus for about 5 minutes.
  2. Heat 1 tablespoon of coconut oil in pan.
  3. In blender mix ingredients including steamed asparagus.
  4. Pour ¼ mix on hot pan.
  5. When bubbles appear flip to cook other side.
