Apple Butternut Squash Soup

A Fall Cleanse Favorite

The colder weather of fall has come and what a perfect time to start making soups.  I always share some of the favorites of my seasonal cleanses and this recipe is at the top.

The fall season is a great time to boost the immune system and shed some unwanted weight.  It is also a great time to slow down.  While summer seems to be the season of saying yes why not let the fall be your time to say no to things that you don’t want to do and take time for yourself.

This soup will leave your home smelling great and it is very easy to make.

Apple Butternut Squash Soup

Ingredients
  • 2 apples, chopped
  • 3 pounds of butternut squash, peeled and chopped
  • 1 onion, chopped
  • 2 tablespoons of coconut oil, melted
  • 2-inch piece of ginger, peeled and grated
  • 4 cups vegetable broth
  • 1 bunch parsley, chopped
  • Topping: 4 tablespoons sprouted pumpkin seeds
Instructions
  1. Preheat the oven to 400 degrees.
  2. Add apples, squash, and onion to a large mixing bowl.
  3. Coat mixture with coconut oil and place on a shallow baking dish.
  4. Bake 35-40 minutes.
  5. Add roasted mixture to a large soup pot.
  6. Add grated ginger and vegetable broth.
  7. Cook for about 10 minutes.
  8. Blend in blender or use immersion blender to make smooth.
  9. Serve with fresh parsley and pumpkin seeds.
