Don’t just walk past the rhubarb next time you are in the market. I have noticed it available since receiving it in my CSA box of organic produce. Rhubarb is a vegetable that looks like red celery but it is treated like a fruit. Unlike celery you cannot eat the leafy portion instead, you can only eat the stalks.
Rhubarb is a good source of vitamin A, vitamin C, vitamin K, fiber, and calcium. It has low-calorie content and so many benefits. I can’t believe I have been missing out for so long. I started with making a delicious Rhubarb Pie Smoothie and next up I will be making rhubarb sauce to top on roasted chicken.
Strawberry Rhubarb Pie Smoothie

Serves: 2
Ingredients
- 16-24 ounces water
- 2 tablespoons cashew butter
- 2 tablespoons oat bran or gluten free oats
- 1 stalk rhubarb cut into pieces
- 1 cup frozen strawberries
- 1 bunch mild greens like spinach or romaine (optional as this does change the taste)
- 1 scoop vanilla protein powder
- 1 teaspoon Camu powder
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- 1 dropper stevia or 1 teaspoon honey
- 3 ice cubes
Instructions
- Mix water and cashew butter in blender
- Add the remaining ingredients and blend until smooth
