How To Reset After Overindulging

I don’t beat myself up when I go to eat and have a heavy meal because I know the next day I can pick right back up with clean eating. Sometimes, though, a heavy meal turns into a week of eating too much maybe on vacation or just being on the road. I have a go-to meal that really helps to hit the reset button.

Roasted Asparagus with Mixed Greens, Red Cabbage, and Lemon Ginger Sweet Potatoes

Roasted Asparagus with Mixed Greens (Serves 2)

½ lb. fresh asparagus
1 teaspoon coconut oil
Sea salt and pepper
2 cups mixed greens
½ cup red cabbage sliced thin
½ avocado

Preheat oven to 400 degrees
Chop off the woody stems from the asparagus
Rinse and dry the asparagus
Place the asparagus in a roasting pan
Massage with coconut oil, sea salt, and pepper
Bake 10 minutes and check for tenderness
Chop and serve over mixed greens, sliced cabbage, avocado and lemon sweet potatoes (recipe to follow)

Lemon Ginger Sweet Potatoes

2 medium sweet potatoes
1 lemon
Dash of powdered ginger
2 teaspoons olive oil
Sea salt and pepper

Preheat your oven to 400 degrees.
Clean the potatoes
Poke fork holes in the sweet potatoes and place on baking sheet
Roast for 30-45 minutes (time varies on size of potato)

Top roasted potatoes and asparagus salad with a squeeze of lemon, dash of ginger, olive oil, sea salt and pepper.
