Ingredients
- 1 lb. cod
- 2 eggs
- ½ cup pumpkin seeds
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
- ½ teaspoon dried thyme
- 1 lemon
- salt and pepper to taste
- Salad: Arugula & Avocado sliced
Instructions
- Steam cod for about 5 minutes.
- In a food processor grind pumpkin seeds
- Add eggs, onion, parsley, thyme and cod to the food processor and pulse for about 30 seconds
- Heat a frying pan with 1 teaspoon coconut oil
- Use a spoon to scoop out 6 cod cakes and fry in pan for about 3 minutes a side
- Place cod cake over arugula and sliced avocado and squeeze fresh lemon all over cod cake and salad
- Season with salt and pepper to taste.
