Cod Cakes

Ingredients
  • 1 lb. cod
  • 2 eggs
  • ½ cup pumpkin seeds
  • 1 teaspoon onion powder
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • 1 lemon
  • salt and pepper to taste
  • Salad: Arugula & Avocado sliced
Instructions
  1. Steam cod for about 5 minutes.
  2. In a food processor grind pumpkin seeds
  3. Add eggs, onion, parsley, thyme and cod to the food processor and pulse for about 30 seconds
  4. Heat a frying pan with 1 teaspoon coconut oil
  5. Use a spoon to scoop out 6 cod cakes and fry in pan for about 3 minutes a side
  6. Place cod cake over arugula and sliced avocado and squeeze fresh lemon all over cod cake and salad
  7. Season with salt and pepper to taste.
