Acaí Bowl With Homemade Granola
A Spring Recipe My Kids Love
When a new recipe is made in my house I usually have one child that loves it and another that doesn’t. That was not the case with this Acaí Bowl. Both of my children asked if they could have this every day for breakfast, lunch, or dinner. The smell of homemade granola cooking was amazing. I have a similar recipe included in my Spring Whole Food Cleanse but it includes some greens!
- 1 frozen Acaí Berry pack (I use unsweetened Sambazon)
- ⅓ cup refrigerated full-fat coconut milk
- 1 cup frozen strawberries (or blueberries or both)
- ⅓ almond milk (can be up to ½ c)
- 1 teaspoon vanilla flavor or extract
- 1 teaspoon honey or a few drops stevia (optional)
- Toppings: homemade granola, ground flax seeds, ground chia seeds, hemp seeds, fresh fruit
- Place acaí packet under hot water for 10 seconds.
- Cut open acaí packet and place in food processor with the remaining ingredients, but not the toppings.
- Process for about 30 seconds and slowly add more almond milk as needed until you get a smooth consistency.
- I put mine in a freezable serving bowl* as the acaí melts quickly. Top with homemade granola and additional desired toppings.

Homemade Granola (2 servings)
Mix ½ cup gluten-free rolled oats, 2 teaspoons MCT oil (or regular coconut oil), 1 tablespoon maple syrup, 1 teaspoon vanilla flavor and a pinch of salt. Mix all in a large measuring cup then place on parchment lined baking sheet. Bake at 320° for 7 minutes. Make sure to watch it so it does not burn.
