The 130 Calorie Chocolate Chip Cake for Two
I am not usually a calorie counter. I got inspired to make a low-calorie cake, though, after having a conversation with a friend that lost a lot of weight.
When we talked about her success she credited a lot to a 100-calorie cake that satisfied her need for a sweet treat and did not sabotage her weight loss. I looked up the ingredients for the cake later online and I was kind of sad. Is my friend going to lose weight, but get sick from the processed ingredients?
This cake took quite a few tries before I got it right. You could put it right in the microwave, but in an effort to avoid the microwave when I can, I made this in the oven. I also purposefully made this for two, so there are no tempting leftovers.
Here is the calorie information: 130 calories, 7.5 grams of fat, 7 grams of protein, 13 grams carbohydrates, 6.5 grams sugar, 4 grams fiber.
- 1 Egg
- 4 Tablespoons unsweetened almond milk
- 2 Tablespoons coconut flour
- ½ Tablespoon honey
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- 4 drops stevia
- 1 Tablespoon Enjoy Life Dark Chocolate Chips
- cinnamon to sprinkle on top
- Preheat Oven to 320.
- Lightly coat two ramekins with coconut oil or use baking cups.
- Mix almond milk, egg, coconut flour, melted honey and stevia in bowl.
- Fold in chocolate chips.
- Scoop mix into 2 ramekins or oven safe bowls.
- Bake 20 minutes.
My kids love this cake. When I double the recipe I double everything except the egg and add a chia egg (1 tablespoon ground chia mixed with 3 tablespoons water).
