Asparagus Pancakes Recipe

Asparagus is one healthy food that I really do not like to eat except if it is prepared in a pancake. My mom used to make this recipe as an appetizer for holiday parties. I changed the recipe to be dairy free and gluten free.
Ingredients
- I bunch asparagus
- 3 eggs
- ¼ cup almond milk
- ¼ cup buckwheat flour
- 1 bunch fresh basil
- 1 tablespoon coconut oil
- 1 teaspoon baking soda
- 1 teaspoon apple cider vinegar
- salt and pepper to taste
Instructions
- Steam asparagus for about 5 minutes.
- Heat 1 tablespoon of coconut oil in pan.
- In blender mix ingredients including steamed asparagus.
- Pour ¼ mix on hot pan.
- When bubbles appear flip to cook other side.
