Sneaky Meatballs

Here is a way to get an extra serving of vegetables into your kids with zero complaints.

I grew up with an Italian mother, so I will tell you these do not taste like the meatballs I ate as a child. My mom never baked meatballs or made them with turkey meat and while hers were delicious I think these are healthier.

These meatballs are light and super simple to make. Some nights we are running around to sports and I make my kids meatball subs, but tonight was a quiet night in so I used the meatballs as a topping on a sweet potato pizza crust. If you want to try the sweet potato pizza crust you can go here.

Sneaky Meatballs

Ingredients
  • 1 pound organic ground turkey
  • 2 small zucchini
  • ½ c gluten free bread crumbs
  • 1 bunch basil (I used 9 leaves)
  • 1 T garlic powder
  • ½ t sea salt
  • 1 jar tomato sauce
Instructions
  1. Preheat oven to 350.
  2. In a food processor blend bread crumbs and basil.
  3. Add zucchini to food processor and blend.
  4. Add turkey, garlic powder and salt and blend.
  5. Form 20 small meatballs and place in glass baking dish.
  6. Pour sauce over meatballs.
  7. Bake for 30-35 minutes.
