Curried Sunflower-PÂTÉ Lettuce Wraps

Ingredients
  • 2 cups raw sunflower seeds, soaked overnight and drained
  • 2 teaspoons curry powder
  • 1 garlic clove
  • ½-inch piece of ginger
  • ⅔ cup water
  • Juice from 1 lemon
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • ½ cup shredded carrot
  • 1 large celery rib, minced
  • ¼ cup raisins
Instructions
  1. Add sunflower seeds, curry powder, garlic, ginger, water, lemon juice, sea salt, and pepper to a high-speed blender.
  2. Blend until smooth.
  3. Remove from the blender and add to a mixing bowl.
  4. Add shredded carrot, chopped celery, and raisins.
  5. Mix well and let it set in the refrigerator for at least 30 minutes before serving.
  6. Serve on a bed of lettuce.
