Buckwheat Pancakes (Gluten Free)

Ingredients
  • 1 cup buckwheat flour
  • 1 cup water
  • 2 eggs or 2 flax eggs
  • 1 teaspoon blackstrap molasses
  • ½ teaspoon salt
  • coconut oil for pan
  • optional toppings: coconut whipped cream, berries, maple syrup
Instructions
  1. Heat frying pan with ½ teaspoon coconut oil.
  2. Place all ingredients in a blender or mix by hand.
  3. Cook for 1-2 minutes per side.
