This morning I was making bone broth and getting ready for breakfast so I decided to try to make egg drop soup. You could use regular chicken broth, but I imagine the homemade bone broth is what made mine taste so good. This is also a really simple lunch idea served with a salad.
Ingredients
12 ounces chicken bone broth
1- 2 eggs
¼ inch piece of fresh ginger minced
½ teaspoon ghee (optional)
¼ avocado (optional)
black pepper to taste
Instructions
Bring broth and ginger to a boil in a small pot
Break eggs and stir with fork to mix the eggs
Turn heat to simmer and slowly add the egg while stirring
Cook for about 30 seconds
Take off heat and add sliced avocado and/or ghee
