Chia Pudding with Cocao and Banana

Ingredients
  • 3 tablespoons chia seeds
  • ½ cup almond milk
  • 3 tablespoons coconut milk* (the liquid part of a full fat can)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cocao nibs
  • 1 teaspoon sprouted pumpkin seeds
  • ½ banana
  • Optional toppings: almonds, walnuts, almond butter, berries, whipped coconut cream or cinnamon
Instructions
  1. Mix the chia seeds, almond milk, and coconut milk.
  2. Let it sit for 5 minutes then give it a stir.
  3. Mix in the pumpkin seeds and cocao nibs.
  4. Let it sit for another 5 minutes and stir.
  5. Cover and refrigerate overnight.
  6. When ready to eat slice the banana and place it on top.
  7. * I tend to use full-fat coconut milk during the week so I usually have some of the liquid portion remaining. If you do not have this simply add more almond milk.
