Asparagus is one healthy food that I really do not like to eat except if it is prepared in a pancake. My mom used to make this recipe as an appetizer for holiday parties. I changed the recipe to be dairy free and gluten free.
Ingredients
I bunch asparagus
3 eggs
¼ cup almond milk
¼ cup buckwheat flour
1 bunch fresh basil
1 tablespoon coconut oil
1 teaspoon baking soda
1 teaspoon apple cider vinegar
salt and pepper to taste
Instructions
Steam asparagus for about 5 minutes.
Heat 1 tablespoon of coconut oil in pan.
In blender mix ingredients including steamed asparagus.
Pour ¼ mix on hot pan.
When bubbles appear flip to cook other side.
