Vegetable Miso Soup

A Fall Cleanse Recipe

The first night of the Fall Cleanse I made this soup.  It was the perfect ending meal to a great day of detoxing.   It only takes a few minutes of prep so I recommend you get the ingredients and give it a try right away.

Ingredients
  • 1 cup water
  • 4 cups broth (depending on your preference bone broth, vegetable broth or chicken broth would all work)
  • ⅓ cup carrots, sliced
  • 1 head broccoli, chopped
  • 1 zucchini, chopped
  • 1 onion, chopped
  • 5 teaspoons organic mellow white miso
  • 1 cup kale, swiss chard, or other greens, chopped
Instructions
  1. In a large pot add broth (or coconut oil) and saute onions and carrots.
  2. Add remaining cups of broth and water.
  3. Add broccoli and zucchini.
  4. Lower to a simmer and let cook for another 5-10 minutes.
  5. Take a small amount of broth and add it to bowl.
  6. Add miso to reserved broth and stir to form a puree.
  7. Place the miso puree in the soup pot and simmer for 2-3 minutes (miso should not be boiled because it will kill the beneficial bacteria).
  8. Add greens and simmer for 2 more minutes.
