Vegetable Miso Soup

The first night of the Fall Cleanse I made this soup. It was the perfect ending meal to a great day of detoxing. It only takes a few minutes of prep so I recommend you get the ingredients and give it a try right away.

Ingredients
- 1 cup water
- 4 cups broth (depending on your preference bone broth, vegetable broth or chicken broth would all work)
- ⅓ cup carrots, sliced
- 1 head broccoli, chopped
- 1 zucchini, chopped
- 1 onion, chopped
- 5 teaspoons organic mellow white miso
- 1 cup kale, swiss chard, or other greens, chopped
Instructions
- In a large pot add broth (or coconut oil) and saute onions and carrots.
- Add remaining cups of broth and water.
- Add broccoli and zucchini.
- Lower to a simmer and let cook for another 5-10 minutes.
- Take a small amount of broth and add it to bowl.
- Add miso to reserved broth and stir to form a puree.
- Place the miso puree in the soup pot and simmer for 2-3 minutes (miso should not be boiled because it will kill the beneficial bacteria).
- Add greens and simmer for 2 more minutes.
