Apple Cinnamon Chia Pudding

I could eat chia pudding every day. Remember you can make this the night before and in the morning your breakfast is ready. Here is a simple recipe:
Ingredients
  • ½ cup almond milk
  • 2 tablespoons coconut milk (liquid from can)
  • ½ teaspoon vanilla extract
  • 3 tablespoons chia seeds
  • ½ apple chopped
  • lemon juice
  • ½ teaspoon cinnamon
Instructions
  1. Add both kinds of milk and stir in vanilla extract.
  2. Add chia seeds to milk mixture and mix well.
  3. Let mixture sit for at least 5 minutes and stir again.
  4. Cover and store in the refrigerator for at least 4 hours.
  5. Chop apple and pour lemon juice on top (or wait until you are ready to eat to chop the apple)
  6. When pudding is thick, top with chopped apple and cinnamon.
