Apple Cinnamon Chia Pudding

I could eat chia pudding every day. Remember you can make this the night before and in the morning your breakfast is ready. Here is a simple recipe:
Ingredients
- ½ cup almond milk
- 2 tablespoons coconut milk (liquid from can)
- ½ teaspoon vanilla extract
- 3 tablespoons chia seeds
- ½ apple chopped
- lemon juice
- ½ teaspoon cinnamon
Instructions
- Add both kinds of milk and stir in vanilla extract.
- Add chia seeds to milk mixture and mix well.
- Let mixture sit for at least 5 minutes and stir again.
- Cover and store in the refrigerator for at least 4 hours.
- Chop apple and pour lemon juice on top (or wait until you are ready to eat to chop the apple)
- When pudding is thick, top with chopped apple and cinnamon.
