Baked Calamari Rings

One pound of calamari cooked two ways is getting close to my goal for one family meal. I made my kids breaded calamari rings (okay I had a few) and the rest I baked plain for my husband and myself.

Ingredients
- ½ pound calamari
- 1 egg beaten
- ⅔ c gluten free bread crumbs (I use Gillian’s Original Bread Crumbs)
- 1 teaspoon Italian seasoning
- ¼ teaspoon sea salt
Instructions
- Preheat oven to 375
- Line baking sheet with parchment paper
- Rinse and pat dry calamari
- Cut calamari into rings
- Mix bread crumbs, Italian seasoning and salt
- Dip rings into egg
- Dip egg coated calamari into bread crumbs with seasoning
- Bake for 10 minutes and turn
- Bake for another 10 minutes.
Can be dipped in marinara sauce and served with salad, a steamed vegetable like broccoli and pasta.
