Baked Calamari Rings

One pound of calamari cooked two ways is getting close to my goal for one family meal.  I made my kids breaded calamari rings (okay I had a few) and the rest I baked plain for my husband and myself.

Baked Calamari Rings

Ingredients
  • ½ pound calamari
  • 1 egg beaten
  • ⅔ c gluten free bread crumbs (I use Gillian’s Original Bread Crumbs)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon sea salt
Instructions
  1. Preheat oven to 375
  2. Line baking sheet with parchment paper
  3. Rinse and pat dry calamari
  4. Cut calamari into rings
  5. Mix bread crumbs, Italian seasoning and salt
  6. Dip rings into egg
  7. Dip egg coated calamari into bread crumbs with seasoning
  8. Bake for 10 minutes and turn
  9. Bake for another 10 minutes.

Can be dipped in marinara sauce and served with salad, a steamed vegetable like broccoli and pasta.
