Superfood Oatmeal Bowl

I enjoy oatmeal but used to avoid it because I was hungry soon after eating it. That is not the case with this oatmeal. It does not spike my blood sugar and I am not hungry for hours after. I love this recipe because it is quick and the ingredients are all things I have regularly stocked in my refrigerator, freezer, and pantry.

Ingredients
  • 1 c water
  • ½ cup almond milk
  • ⅓ c oat bran
  • ¼ c gluten free oats
  • ¼ c frozen blueberries
  • 1 T Justin’s Maple Almond Butter
  • 1T ground flax
  • 1T ground chia
  • 1 T sprouted pumpkin seeds
  • 1 T cocao nibs (unsweetened)
  • 2-4 drops stevia
  • ¼ t cinnamon
Instructions
  1. Combine water, oat bran, and oats in saucepan over medium heat.
  2. Slowly warm and continuously stir.
  3. Add almond butter.
  4. Add almond milk as oatmeal thickens to your desired consistency.
  5. Add frozen blueberries when oatmeal is almost done and stir.
  6. Pour cooked oatmeal in bowl and add flax, chia, pumpkin seeds, cocao nibs, and stevia.
  7. Sprinkle cinnamon on top.
